Rehydrating Sourdough starter

Starting Starter too much?

Does establishing your own starter sound like too much? Well you can order your own in a dehydrated state and all you nee to do is rehydrate and feed it.

What exactly is dehydrated starter?

Dehydrated starter is exactly what is sounds like. It is active starter that has had all the water removed. This deactivates the yeast and puts it into a hibernation like state.

How do I rehydrate my starter?

My starter recipe is a 100% hydration solution. This means that I add the same amount of water as flour. So to rehydrate my starter all you need to do is add the same amount of water as dehydrated starter.

My dehydrated starter comes in 15g pouches so the first day you need to mix it completely with 15g of water. The next day you will proceed with the sourdough feed instructions, but do not discard today. Measure your starter's weight and feed it with equal parts flour and water. Combine thoroughly, scrape down the sides of the container, and cover. Starting on the Day 3 you will proceed with the discard and feed process.

The starter is ready to use doubles in size within 4 hours of feeding. Reviving a starter can take a few days, but it does not take as long as starting from scratch.
